I’m back! Still here, just had a lot going on. I had surgery at the end of March and needed a few weeks to recover, then we went on our awesome two-week trip to New York City and Washington, D.C.! More to come with pics and info about our trip soon.
I haven’t made much progress in losing weight or eating healthier since my last posts, unfortunately. But I’m back to it! I purchased a book called 30-day Vegan Challenge by Colleen Patrick-Goudreau. I really want to focus on eating more fruits and veggies and less meat and processed food, so I figured I’d just hop into it and try a vegan challenge to see if I like it. Being from Texas, I love red meat–steaks, ribs, burgers, you name it, I probably love it. However, I’ve always had thoughts about the suffering of animals for our benefit and also how unpleasant I feel after eating red meat. I’ve never been a huge fan of fish; too hard times I’ve come across a bone unexpectedly and it’s just gross. Chicken and pork are fine, also.
I love fruits and vegetables, but I also love fried foods and things that aren’t healthy. So I want to take the month of June to follow a vegan diet as closely as possible and see if it’s something I enjoy doing and feel is sustainable.
Today, I went to a Chicago-type eatery with a friend. She had a cheese steak and I had a salad and fries. Unfortunately, I didn’t realize the salad had cheese, but I tried my best to eat around it. I also went by Trader Joe’s for a little grocery haul and had some watermelon and pineapple when I got home. I also had coconut water and some chips. Then for an early dinner/late lunch, I made brown rice, black beans, spinach, and hummus mixed together wtih Frank’s Red Hot Sauce and it was delicious! I think I may make a smoothie in a little bit, because I’m starting to get a little hungry again.
